Healthy Pumpkin Pie with Argan Oil

 A halloween favourite! You can't go wrong with this delicious and healthy pumpkin pie recipe, adapted from one of our favourites from The Healthy Chef. Full of antioxidants, fibre and low GI, this family treat is not only mouth-watering, it's also full of goodness for the body!

Healthy Pumpkin Pie with Argan Oil Recipe

Preparation time: 20 minutes

Cooking time: 50-55 minutes

Serves: 12 people


Oatmeal Gingersnap Shortcrust

Use a 20 cm pie tin.

  • 200g (2 cups) rolled oats (or gluten free oats if required)
  • 50 g (1/2 cup) desiccated coconut
  • 2 tbsp melted butter
  • 2 tbsp argan oil for eating
  • 2 tbsp honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground ginger or 1 teaspoon fresh grated ginger


  • 450g (2 cups)  roasted cinnamon pumpkin
  • 3 fresh pitted dates or 2 tablespoons maple syrup or honey
  • 3 eggs
  • Pinch sea salt
  • Pinch of nutmeg
  • 1 tsp ground cinnamon
  • 1/4  teaspoon ground ginger
  • 1 cup coconut or pure cream
  • 1 teaspoon vanilla extract


  1. Combine the shortcrust ingredients into a bowl and mix well until combined. The longer it is mixed the better, as a softer dough will bind better. 
  2. Leave to rest for 15 minutes.
  3. Press the shortcrust into a 20 cm pie shell and set aside.
  4. Blend the roasted pumpkin with the dates or honey, eggs, salt, nutmeg, cinnamon, ginger, cream and vanilla.
  5. Pour the mixture into your pie shell.
  6. Bake in a preheated 160°C oven for 50-55 minutes.
  7. Cool for at least 2 hours and enjoy warm or cold!
